A real question from the full analysis

This is how each question you miss appears in the report. The question, the right answer, the explanation and the source are real. The answer shown as yours is an example, not anyone's data.

A kitchen prepares ready-to-eat chicken salad on Tuesday (counted as Day 1) and holds it at 41°F (5°C). What is the last day it may be sold or served under the Code's date marking rule?

  • A The following Sunday
  • B The following Monday
  • C The following Tuesday
  • D The following Wednesday

Example answer, marked sure: A · Correct answer: B

Refrigerated, ready-to-eat time/temperature control for safety food prepared in the establishment and held more than 24 hours may be held at 41°F or below for a maximum of 7 days, and the day of preparation counts as Day 1 (§3-501.17(A)). Tuesday is Day 1, so Monday is Day 7. A is Day 6. C is Day 8. D is Day 9. Remember: count the prep day, and the seventh day is the last.
