A real question from the full analysis

This is how each question you miss appears in the report. The question, the right answer, the explanation and the source are real. The answer shown as yours is an example, not anyone's data.

A deli slicer is used all day on cold cuts, which are TCS foods, in a kitchen at normal room temperature. What is the maximum interval between cleanings for food-contact surfaces and utensils in constant use with TCS food?

  • A Every 8 hours
  • B Every 12 hours
  • C Every 4 hours
  • D Once at the end of the day

Example answer, marked sure: A · Correct answer: C

C follows Food Code 4-602.11(C): surfaces and utensils used with TCS food must be cleaned throughout the day at least every 4 hours. Residue builds and bacteria multiply in the temperature range. A, B, and D allow far too much growth time. Cold prep rooms held at set temperatures have longer intervals, but 4 hours is the default. Remember: cleaning and sanitizing every 4 hours during continuous use.
